This recipe invites you to shake up how you usually view breakfast and indulge in a state fair goodie for your first meal of the day. The fiber, carbohydrates, and protein in this version offer lasting energy, while the unique blend of spices and seasonings creates a memorable flavor that you might just want to revisit for dinner as well.

For a healthier version of this treat, trade out the regular breakfast sausage links for turkey or even vegetarian versions.

 

What You Will Need

  • 1 cup of stone ground cornmeal
  • 1 large egg
  • 1 cup plus 2 tablespoons of milk
  • 1 teaspoon of kosher salt
  • 2 tablespoons of granulated sugar
  • 1 cup of self-rising flour
  • 14 cups of vegetable oil for frying
  • 12 precooked breakfast sausage links
  • Confectioners’ sugar for dusting
  • 1 and 1/2 teaspoons of pure vanilla extract
  • 1 and 1/2 teaspoons of apple pie spice
  • 1 and 1/2 teaspoons of ancho chile powder
  • 1 and 1/2 teaspoons of sweet paprika
  • 3/4 of a teaspoon of cayenne pepper
  • Maple syrup, hot sauce or ketchup for serving
  • 1/2 cup of fresh flat leaf parsley leaves
  • 1/4 cup of chives
  • 3/4 of a teaspoon of mustard powder
  • 1/4 of a teaspoon of coarsely ground black pepper
  • A deep fry thermometer
  • 12 six inch wooden skewers
  • A whisk
  • A large bowl
  • A small bowl
  • A medium pot
  • A tall glass
  • A baking sheet or large plate
  • Paper towels
  • Tongs

 

What to Do

  • In the large bowl, whisk together the flour, cornmeal, granulated sugar and salt
  • In a small bowl, whisk together the milk and egg
  • Pour the egg mixture into the flour mixture
  • Stir until well combined
  • Chop the parsley leaves and set aside
  • Slice the fresh chives and set aside
  • If plain batter is desired, the corn dogs will be the next cooking option if not, add the apple spice and vanilla extract for a sweet batter or the ancho chile powders, sweet paprika and cayenne pepper for the spicy batter, or for herb mustard, add the parsley leaves, fresh chives, mustard powder and black pepper
  • Fill the medium pot a little over halfway with vegetable oil
  • Attach a deep fry thermometer to the pot
  • Bring to a boil at 350 degrees F with medium-high heat
  • Preheat the oven to 250 degrees F
  • Fill a tall glass 3/4 full with some of the batter
  • Push the pointed end of the six inch wooden skewer roughly halfway through each sausage
  • Line the baking sheet or large plate with paper towels
  • When the oil is hot, dip 1 sausage in the glass of batter until fully coated
  • Allow the excess to drip off back into the glass
  • Dip the sausage completely into the oil, holding it by the skewer
  • Hold for a few seconds until the batter is set
  • Let go of the skewer and allow the sausage to bob in the oil and continue frying
  • Repeat these steps 2 or 3 at a time, turning as needed in the oil with tongs
  • Cook for 4 to 6 minutes, or until a deep golden brown color
  • Allow the corn dogs to drain on the paper towel lined baking sheet or plate
  • Transfer the corn dogs to the oven to keep warm during the remaining batches
  • Fill the glass with more batter as needed
  • Arrange on a plate with desired dipping sauce and serve hot
