Black Bean Brownie Recipe

One of the challenges of being a family caregiver is that you’re constantly worried about your loved one’s health and her diet. You want her to eat foods that are good for her, but you don’t want to deny her the flavors that she loves, either. One way that you can make a healthier brownie is to add black beans to the batter. The beans add both protein and fiber, which are two nutrients that your elderly loved one needs. The good news is that the brownies still taste fabulous.

What You’ll Need

Black bean brownies really don’t need much different in the way of ingredients than other brownie recipes do, but you’ll want to make sure that you have the right proportions. The recipe doesn’t require flour, so it’s great for loved ones who are avoiding gluten for one reason or another. You will need a blender or a food processor to blend the batter to the right consistency. To make the brownies, you’ll need:

·        1 15-ounce can of black beans, drained and rinsed

·        3 tablespoons of vegetable oil

·        3 large eggs

·        1/2 cup sugar

·        1/2 cup Dutch process cocoa

·        1 teaspoon vanilla extract

·        1/2  teaspoon baking powder

·        A pinch of salt

Mixing Everything Together

Add the black beans and the oil to the bowl of your food processor or to the blender pitcher. Blend them together until the beans and oil are smooth and there are no large pieces of black bean in the mixture. Add the rest of the ingredients to the bean puree and blend them together until the entire batter is smooth. Pour the batter into the baking pan of your choice and bake at 350 degrees Fahrenheit for at least 20 minutes. The brownies are done when a toothpick comes out clean after you insert it into the center of the pan. Let them cool, and then enjoy.

Serving Suggestions

If you want to dress up the brownies a little bit, there are some different things you can do. Dust some confectioner’s sugar lightly over the top of the brownies or sprinkle chocolate chips over the top of the pan just before baking them. You can also make a chocolate ganache if you really want to make a decadent treat. The good news is that once the brownies are baked, no one will know that there are beans in the brownies unless you tell them.
